Meatballs

CHICKEN  MEATBALLS
Healthy Diet



We all love chicken .
A meatball is a ground or minced meat rolled into  a small ball ,sometimes along with other ingredients such as breadcrumbs,minced onion,eggs,butter and seasonings.
Meatballs are cooked by frying,baking,steaming or braising in sauce.
This is a lovely and easy recipe for Chicken Meatballs .

INGREDIENTS

  • 3boneless chicken ,cubed 
  • 1 tbsp white pepper powder
  • 1/2 cup chopped cilantro 
  • 1tbsp cheddar cheese
  • 2tsp baking powder
  • 2white eggs
  • 2tbsp minced garlic
  • 1/2tbsp chopped onion
  • 1 cup milk 
  • 1/2 cup flour
  • 1/teaspoon-cooking oil 
  • cooking oil spray
METHOD

Take a  bowl add white eggs,milk & oil mix them well.
Add  chicken  to the food processor or Grinder and pulse to combine into rough mixture.
Take a big bowl add rough mixture of chicken add with garlic,cilantro,cheddar,onion,white pepper,flour,baking powder,milk ,cooking oil ,egg whites and make a dough.
Divide the dough into small or medium sized round balls,while doing this glazed the palm and fingers with oil.
Take a huge microwave safe bowl filled with water,  drop all the raw chicken balls and boil them for 6 mints.
Preheat the oven 375 fahrenheit.
Keep the boil chicken balls in broiler or oven safe pan and cook for 15-20mints.
Turning once in between when the chicken balls are pierced by a knife .
Change the oven mode to broiler mode and keep the chicken pan just below the top rack for5-6 mints
Turn the side and keep for another 5-6 mints .
This is to coat slightly with black spot .

Serve with julienne cut vegetables .

Healthy Smoked Salmon

 HOT SMOKED SALMON & GUACAMOLE

Salmon is the common name for fish in the order Salmoniforms.
Salmon are described as anadromous born in fresh water before spending a large portion of their lives navigating the open sea only to swim bucket their birthplace  in order to spawn.
It is an excellent source of high quality protein ,vitamins,and minerals but the content of Omega -3 fatty acid that receive the most attention.
It is a super healthy diet be in lunch or dinner.
Salmon can be purchased as either steaks or fillet,fresh,frozen,canned or smoked.
Once frozen and thawed,it should not be refrozen.
I always prefer fresh salmon fillet.
This tasty smoked salmon is the easiest and fastest way to cook salmon.

INGREDIENTS

For the Glaze


  • 1tbsp soy sauce
  • 1tbsp garlic powder.
  • 1tbsp cajun seasoning
  • 2tbsp extra spicy salt free seasoning blend
  • 1tbsp whole oregano
  • 1tsp parsley flakes
  • 1tsp black pepper

For the Fish

  • 4 salmon fillets
  • vegetable oil or olive oil spray 
  • black pepper
METHOD



  • Combine all glaze ingredients in a  bowl.
  • Cut fillets 1 1/2  to 2 inches wide .
  • Place the glaze ingredients in a large casserole  dish .Coat the salmon fillets in the marinade and then place them skinless-side down in the marinade .
  • Marinate for 1hr or overnight .
  • Preheat the oven 375 fahrenheit.
  • Keep the marinated fish in broiler or oven safe pan and cook for 20-25 mints.
  • Cook undisturbed until the fish skin is starting to crisp.
  • Using a flat spatula carefully flip the fillets over and spray some oil.
  • Cook until the salmon is just opaque in the center and cook 4-5 mints more .
  • Transfer to serving plate  and serve immediately  with guacamole .

GUACAMOLE






Guacamole is an avocado based dip  or salad .
It is used in Mexican cuisine also in American cuisine .
It is made by mashing  ripe avocados and sea salt .


INGREDIENTS 


  • 4 peeled ripe avocados
  • 1 1/2 lime juiced
  • 1tsp cumin powder
  • 1/2 chopped onion
  • 1 chopped jalapeno
  • 1 chopped tomato
  • 1/2 cup chopped cilantro
  • 1tsp minced garlic
  • 1tsp sea salt
METHOD

In a large bowl scooped avocado pulp  and lime juice toss to coat.
Drain and reserve excess lime juice .
Using a masher add the salt ,cumin  and mash.
Then add onion,tomato,cilantro,garlic ,jalapeƱo and mash well.
At last add reserve lime juice and keep it in room temperature for 30 mints .
Serve with chips,fish etc.

Egg Muffin

SCRAMBLED EGG MUFFINS
80 calories

My husband and I are currently on healthy diet and its is going well.

We both had different reasons for this diet.

It's also really nice for me to not watch my husbanded things i can't have.

It has not been as  hard for me as i expected.
I think that is due to the fact that i did a major diet about 6 months ago .

Except  I did really want a chocolate ice-cream  last night because i saw some of my friends posted her picture with chocolate ice-cream and those are insanely delicious!

The danger of following to many food post on social media is that some days i want to eat Everything i see people post .

The one thing i have worked really hard on  with this diets making sure my husband eats enough .

I've increased his good fat intake and protein significantly so he can stay fueled and full for the day .

I've discovered that a Big Breakfast has been the key for a succesdful day.

So we are eating Egg Muffins to excelerate our metabolic rate .

It is seriously  Awesome and Yummy.


INGREDIENTS

  • 3 White eggs
  • 2tbsp shredded chicken (optional)
  • 1tbsp chopped onion
  • 1tsp chopped green chili
  • 1/2 cup coriander leaves
  • 1tbsp chopped tomato 
  • 1/2 tsp chopped garlic
  • 1/2 tsp black pepper
  • 1tbsp cheddar cheese
  • 1tbsp chopped spinach leaves
  • 1/2tsp cooking or cooking spray
  • 2tbsp milk
no salt and sugar



PROCEDURE

Preheat oven to 350 fahrenheit.

In a large bowl beat the white eggs add milk, onion ,  cilantro , garlic, tomato ,cheese,pepper,green chili coriander leaves , spinach and chicken (optional).

Spoon by 1/3 cupfuls into muffin cups or small bowl coating with cooking spray.

Bake 20-30mins or until a knife inserted near the center comes out clean.

Serve with any fruit juices.

COCKTAIL

TEQUILA SUNRISE




The weather is slowly transitioning to Monsoon Everywhere.

Today It is Raining outside and not mood to go outside .


Wants to see the rain with a glass of SUNRISE in my hand.


They are perfect refreshment while raining outside and also in  scorching summer.



              Tequila Sunrise is a  cocktail  made of     
 tequila ,orange juice and grenadine syrup and served in a wine or tall glass.


Ingredients
  • 1.5oz Chilled Tequila
  • 4 oz Orange Juice
  • 1shot grenadine syrup
How to make 

Add the tequila and then the orange juice .

Float the grenadine on top .


Garnish with berries or orange slice 








KEBAB'S


Kebab's are very famous as starters in restaurants.
Kebab is a Middle Eastern , Eastern Mediterranean and South Asian dish of meat, fish or vegetable roasted or grill on a skewers.
They are famous along with restaurants and high way dhabas.
They are grilled in the fire.
As Kebab can serve as a starter with wine and Beer 
It is very easy to make and serve your guest .


Lasuni(garlic)Chicken Kebab

It is white, creamy and flavor of garlic.

INGREDIENTS
  • 2lbs chicken breast (boneless)
  • 3tbsp plain yogrut
  • 3tbsp cream
  • 1/2tsp black salt
  • 2tbsp green chili paste
  • 4 tbsp garlic paste
  • 2 tbsp Black pepper
  • 3 tbsp butter
  • cooking oil spray or 2tbsp oil to brush the kebabs
  • 1tbsp white pepper
  • Salt to taste
  • Sugar
  • skewers
Hariyali Chicken Kebab

Hariyali chicken kebab is simple recipe seasoned with green seasoning like Coriander leaves and mint leaves.

INGREDIENTS
  • 2lbs chicken breast (boneless)
  • 2tbsp plain yogrut
  • 1/2tsp black salt
  • 2tbsp green chili paste
  • 2 tbsp Black pepper
  • 3 tbsp butter
  • cooking oil spray or 2tbsp oil to brush the kebabs
  • 1tbsp white pepper 
  • 1tbsp red chili powder
  • 1cup chopped Mint leaves
  • 2cups coriander leaves paste
  • Salt to taste
  • Sugar
  • skewers
Directions

Cut the chicken into medium pieces.
Marinate the chicken  with garlic paste, yogurt, cream,chili paste, black pepper , white pepper, butter, salt sugar and let it rest overnight in the refrigerator.
Apply some oil coating on skewers and arrange the chicken pieces.
Spray or brush some oil on the top of the chicken skewers.


How to cook 

Preheat the oven to 375 fahrenheit.
Keep the chicken in broiler pan and cook for 25-35 mints.
Turning once in between when the chicken piece is pierced  by a  knife .
Change the oven mode to broiler mode and  keep the chicken pan just below the top rack for 3-5 mints .
Turn the sides and keep for another 3-5 min
This is to coat slightly  with black spot .

** Squeeze some lemon on the top  and Serve with Mint chutney and Salad.

SHUKTHO
                         Traditional Bengali Dish

Being a bong we are food lover . 
Bengali meals are like  four to five courses
Bong just d'nt manage to have their meal with  Roti and Vegetable curry .
Bong's meals are like king size dawat.
The meal start with  teetho ( bitter) like Neem , alu  bhaja, shuktho followed with dal( yellow lentils),fish curries/chicken curries,chutney and sweets.
Shuktho is very famous in all bengali function .
The main aroma of shuktho comes for special touch of RADHUNI.

RADHUNI is an  aromatic dried fruits and first cousin of AJWAIN are often used in Bengali Cuisine but are rarely used in the rest of India. The fresh leaves are used as an herb in Thailand and it is used medicinally in Myanmar.
In US radhuni is very rare to get in grocery stores .
sometimes instead of radhuni i used wild celery seed from WHOLE FOOD MARKET.

Things Need  To Cook
                 Recipes serves 5-6 people

Pach-mishali Vegetables in combination from this following list
  • 1 Plantain (Kach Kola) cut into lengthwise
  • 10-12 Drumsticks( Sojne Data)
  • 1 Potato(Aloo) cut into lengthwise
  • 1 Sweet Potato(mist/ranga aloo) cut into lengthwise
  • 1 Eggplant cut into lengthwise
  • 2 Bitter Gourds(karela) cut into thin slice   
Need to make Paste


  • 1tbsp-Yellow mustard seeds
  • 1tbsp- Black mustard seeds
  • 1 tbsp Ginger paste
Soaks the mustard seeds with enough water and grind them .

Time to Tempering Items for Shuktho
  •  1tbsp- Pachforon
  • 2 bay leaves
  • 4 tbsp cooking oil -mustard oils 
  • Ghee
  • 1 cup sun dried lentils dumplings(bori)

Dry Masala to make 
  • 1tsp fennel seeds/mouri
  • 1tsp cumin seeds
  • 1 tbsp methi(fenugreek seeds)
  • 1tsp panchforan
Roast all the dry seeds in low flame then Grind.
  • Radhuni powder

Can make it in a large amount and store it for some other day.

Finally  coconut powder and 1/2 cup milk dilute with water to make the gravy thick.

How to Cook 

Heat oil in pan or wok fry bori till its turn brown .
Keep  aside then add pachforon after 5 sec add potato sliced,plantain,drumsticks,eggplants separately fry them till half done .

At last fry the bitter Gourd make it full done.
Here again put some oil along with bay leaves and ginger paste fry them  for some times.
After ginger paste saute with oil pour 2 cups of water along with all mustard seeds paste and dry masala  mix them well .Let them boil .
Slide all fried vegetables to the pan add  radhuni sugar ,salt as per taste. 
Mix them well.
Cover the pan with lid .
                     cook it for 10 minutes .
At last add diluted milk,coconut powder and ghee .

                             Serve with white Rice.

**Shuktho always serves in room temperature.





   KOLKATA STYLE CHICKEN BHARTA  


                      

Chicken Bharta is a spicy minced chicken dish .
Basically popular in dhabas and roadside eateries in India.
There is a famous restore in south kolkata called "HONEY-DA -DHABA".
They are famous for this recipe and myself was one of their daily customer for Chicken Bharta nd Naan .Some of their chef revealed their secret in a cookery show .
I followed their steps and outcome was good .
Do Try out this recipe and let me know how its works.


INGREDIENTS

  • 1lbs-boneless chicken
  • 1 onion -finely chopped
  • 1 tomato finely chopped
  • 1tsp ginger paste 
  • 1tsp garlic paste
  • 1tsp turmeric powder
  • 1tsp chili powder (as per taste)
  • 1tsp cumin powder
  • 1tsp coriander powder
  • 2tsp kasturi methi{dry fenugreek powder}
  • 3tbsp cashew paste
  • 1 cup plain yogrut
  • 2tbsp plain cream
  • salt to taste 
  • 1tbsp sugar
  • 2tbsp coriander leaves
  • whole garam masala(cloves,cardamoms,bay leaves)
  • 1tbsp butter
  • 2 hard boiled egg
  • 4 tbsp white oil(safola,canola,vegetable oil)
METHOD

Heat oil in a pan and add whole garam masala.
Let them sizzle then add chopped onion and fry until brown.
Time to add ginger + garlic paste fry them little after that add chopped tomato and fry all in a low heat till oil oozes out from the masala .
Then take a bowl mixed all the  dry spice powder with water and add to the pan .
Fry till the raw smell goes away.
At last add boneless chicken to it and mix them with the spices .
Wait till the chicken become soft then add salt ,sugar and cashew paste mix them well.
Now time to drizzle with cream,butter and kasturi methi  over it.
Cook it in a slow flame for 15 mints .
Turn off the heat add some chopped  coriander leaves (cilantro).
Garnish with hard boil eggs and serve with Naan,Roti.
